CHILI LIME SHRIMP

A touch of sweet, a touch of hot, this shrimp has so many uses.  Eat it as a main dish, roll it up as a burrito, put it on rice, have a taco, or how about a chimichanga? This recipe is not overly hot, feel free to kick it up.

INGREDIENTS:

36 medium to large shrimp

1 TBSP low sodium soy sauce

Juice of one lime

1 tsp lime zest

1 TBSP honey

1 tsp Sriracha chili sauce

1 TBSP garlic, minced

½ tsp chili powder

1 TBSP olive oil

PREPARATION:

Peel and rinse shrimp.  Drain well. Pat dry with paper towels.

Put all ingredients in a bowl and add shrimp, stirring to coat.   Let marinate for 20 min.  Drain.  Cook as desired.  I usually fry them, but you can grill, bake or broil.  Last night we had tacos.  You should place tortillas in a dry hot pan for 60-90 seconds until browned, flip over and cook the other side.
