BOSTON CREAM PIE, EASY (by Tika)

When you've just gotta have it.  You know those days.
When you’ve just gotta have it. You know those days.

CAKE INGREDIENTS:

1 yellow cake mix

4 eggs

3/4 cup canola oil

1 cup milk

Beat the eggs and oil until well mixed.  Add cake mix and milk.  Beat on low one minute.  Scrape sides of bowl and turn mixer to medium.   Beat for another two or three minutes, scraping the sides twice more.  Pour into prepared pan and bake according to package directions.  Let cool to room temperature.

PUDDING INGREDIENTS:

2 small boxes vanilla instant pudding

1 tsp vanilla extract

4 cups cold milk

Prepare with mixer until thickened and pour over cooled cake.  Refrigerate.

GANACHE FROSTING:

1 cup whipping cream (heavy cream)

2 TBSP dark corn syrup (corn syrup gives ganache a nice sheen)

1 ½ cups semi-sweet chocolate chips

1/3 cup sugar

2 TBSP butter

1 tsp vanilla

Dash salt

Put all ingredients except butter and vanilla in a small saucepan.  Heat over medium heat until you see bubbles appear.  Stir constantly.  Once the mixture is bubbly and thickened, remove from heat.  Add butter and vanilla.  Let cool to room temperature and pour on your cake.  You can leave it bumpy and lumpy or smooth it out.  Your preference.  Now . . . Grab the forks.

Admit it –  how easy was that?  Nobody will know you used a few boxes.  If you don’t tell, I won’t tell.
