Three Minute Teriyaki Dipping Sauce

Teriyaki is one of my very favorite flavors. I don’t imagine you could bring your own to a restaurant, but I might be tempted to sneak a small jar in. I’ve done worse. Like the day I brought a beagle on a chain inside the Broome County Airport. Never mind. That story is for another day. Today I’d probably get arrested for doing that.

Anyway, this Dipping Sauce is so quick to make, and I just love how thick it is. I use it on everything, including take-out. I won’t use those little packets they give you.

A few times I purchased ready-made Teriyaki Sauce in a store. Notice I said a few times? Didn’t like it.

This Sauce can be used on take-out food, Egg Rolls, Spring Rolls, Chicken Wings, or whatever strikes your fancy. It really is very good and takes just a few minutes! We had Chicken Wings today, and of course I used this recipe. Yum!

INGREDIENTS: YIELDS ½ cup
¼ cup Water
¼ cup Low Sodium Soy Sauce
1 TBSP Cornstarch
¼ cup Honey
½ tsp Ginger Powder, or ½ tsp Ginger Root, peeled and grated
1 TBSP Mirin *
1 clove Garlic, minced or ¼ tsp Garlic Powder

PREPARATION:

In a small saucepan, whisk Water, Soy, Cornstarch. Add remaining ingredients and simmer for a few minutes. It will thicken quickly, so don’t run off. It will burn.

*If you can’t find Mirin, try Rice Wine Vinegar. I bought a bottle of it a good 6 or 8 months ago. I use it a lot. Store opened bottle in the refrigerator next to your Sake. lol

Easy Orange Chicken

     Almost everybody loves Orange Chicken, but let’s face it, buying it to go is expensive.  Just for Bob and I, we sometimes spend $40 or more, depending on how many sides we get.  What if I told you that for about $10.50, you could feed 4 adults?  It’s true.  Side dishes are on you, but you can buy a bag of good quality pre-cooked breaded Chicken and make Homemade Orange Sauce that is every bit as good as you’d get in a restaurant.  While the Chicken is in the air fryer, or toaster oven, make the sauce.  SO EASY!  You could also use it as a dip for Egg Rolls.

INGREDIENTS: 

½ cup Orange Marmalade

½ cup Orange Juice (1 Orange)

1/3 cup Low Sodium Soy Sauce

2 tsp Rice Vinegar (Rice is best, but white vinegar works)

1 tsp Garlic, minced

½ tsp Ginger Root, peeled and grated fine

1/8 – ¼ tsp Crushed Red Pepper

1/3 cup Chicken Broth

2 TBSP Corn Starch

PREPARATION:

     Place a small saucepan on the stove.  Combine all the Ingredients and whisk until combined.  Simmer until the desired thickness is obtained.  I put it in a gravy bowl and let everyone pour Sauce over their own Chicken.  Serving Egg Rolls on the side?  Oh yeah, the Sauce is a great dip.

YAKISOBA SAUCE

Yakisoba Sauce

     What is Asian Yakisoba Sauce?  Other than delicious and easy to make?  Use it on Yakisoba Noodles, Beef, Pork, Chicken, Shrimp.  What does it taste like?  It’s a teeny bit sweet, a teeny bit spicy, a teeny bit salty, and a teeny bit sweet.  You are welcome to customize it.  If you want it hotter, add a bit more Honey or Hoisin Sauce, if extra Tang gets your taste buds in a whirl, up the Rice Vinegar by another teaspoon.  For a Spicier version, add a few extra drops of Chili Oil or even some Siracha Sauce.  Here’s how I made it:

 

INGREDIENTS:  Yields ½ cup +/-

4 TBSP low sodium Soy Sauce

2 TBSP Worcestershire Sauce

1 TBSP Rice Vinegar

1 TBSP Honey or sugar

1/8- ¼ tsp Chili Oil

1 TBSP ketchup

2 tsp Hoisin Sauce

2 TBSP Oyster Sauce

½ tsp fresh Ginger root, finely minced

 

PREPARATION:

Mix all ingredients in a small bowl using a fork or small whisk.  Cover and refrigerate.

KENTUCKY BOURBON CHIPOTLE BBQ SAUCE

Kentucky Bourbon Chipotle Sauce (3)

 

     I think Bob and I are both addicted to this Kentucky Bourbon BBQ Sauce.  I created this second version and it was so outrageous on our grilled chicken!  It’s also delicious on pork.  Baby back ribs?  Amazing.  We tried it on boneless ribs too.  Chicken wings?  Oh yes!  Beef or shrimp?  I can picture cold boiled shrimp and instead of traditional cocktail sauce, serving my Bourbon Chipotle BBQ sauce instead.  Why not!  This recipe is not so much tomato flavor.  I wanted other flavors instead.  The highlights are sweet and definitely spicy!  The spicy is adjustable, so don’t be afraid to give this a try.   Feel free to marinate your meat prior to cooking for additional tenderization and flavor. 

     You will simmer the sauce long enough to burn off the alcohol and will be left with an honest to goodness zesty, full-bodied bbq sauce that is perfect on nearly anything. Please make sure to scroll to the bottom of this post to see some additional photos of finished dishes using this sauce.  

Don’t forget to serve some at the table for dipping sauce.

Yield:  Approximately 2 cups.  Keeps well in the refrigerator, so feel free to make it ahead.

 

INGREDIENTS:

1 cup ketchup

1 TBSP tomato paste

1/3 cup fine Kentucky bourbon

4 TBSP brown sugar

1/3 cup molasses

3 TBSP apple cider vinegar

2 TBSP Worcestershire sauce

1 TBSP low sodium soy sauce

1 TBSP Dijon mustard

1 ½  tsp minced onion flakes or onion powder

1 tsp garlic powder

½ tsp Chipotle chili powder

½ tsp pepper

 

PREPARATION:

In 1 ½ qt saucepan, whisk all ingredients and bring to a boil. Reduce heat and let simmer for 10-15 minutes.

NOTE:  ½ tsp Chipotle chili powder will make a hot sauce.  If you want medium, cut Chipotle down to ¼ tsp.  If you like really hot, go for ¾ tsp.  Atomic?  Add 1 full tsp.
