Smoked Beef Roast Sandwich

   If you’ve ever tasted a melt in your mouth smoked beef roast, it’s something you haven’t forgotten. It can be served sliced or on a sandwich piled high with sautéed mushrooms and onions. Here’s how Bob did it.

INGREDIENTS
3 lb beef roast
Brine
Salt, pepper, garlic powder, onion powder

PREPARATION

Brine the beef for 24 hours. Drain, season, and smoke over apple wood chunks and charcoal for 3 hours. If you use a larger cut of beef, you’ll have to cook it a little longer.

We served our sandwiches with broccoli salad, tossed salad and cole slaw. It was so good I’m even having a Westover Leftover sandwich right this minute.  French fries would have been great too.  Ohhhhhhh, I should have had French fries.  Too late now!

TUNA SALAD, ALBACORE

                                     What’s better for a quick dinner or lunch?  Not much!

INGREDIENTS:

Two 2.6 oz packets Albacore tuna

2-3 TBSP chopped onion

1 large rib celery, chopped

1 mini sweet pepper, chopped

1 ½ TBSP sweet relish

1/3 cup mayo

1/8 tsp dill weed

¼ tsp garlic powder

 

PREPARATION:

Mix all ingredients in a small bowl and serve it on a lettuce leaf, bread or toast.

You know, it’s a rare thing to eat a sandwich that deserves bragging rights. A sandwich is just a sandwich, right? Well . . . not this one!

This sandwich was dinner last night. It would be ideal for game day or anytime you want a hearty delicious sandwich. I think no preparation instructions are necessary, but here’s’ what’s in it. (Or on it, or in my tummy now).

I used toasted pumpernickel, but a nice rye would be delicious too! Tomato, cajun turkey, swiss cheese, bacon, and mayo. Had we had lettuce, you can bet there would have been some nice Romaine lettuce leaves on there also.

Arghhhhhh, now I want another one. I made myself hungry again. And Bob went to the store, so we have lettuce.  See ya!

If you are an oyster fan, you probably know that the months ending in “R” are the months when they are in season.  Bob is a huge fan of oysters cooked in a number of ways or eaten raw.  Me?  Not so much.  Here is Bob’s Southern style overstuffed Oyster Po’ Boy sandwich.

INGREDIENTS:

1 Pint oysters

2 large eggs

2 cups cornmeal

¼ cup AP flour

1 tsp Cajun Seasoning

1 tsp pepper

Olive oil or canola oil

PREPARATION:

In small bowl, beat eggs, stir in oysters and let sit for 5 minutes.

In another small bowl, combine cornmeal, flour, Cajun seasoning and pepper.  Using a fork, transfer the oysters one at a time and gently roll through flour/cornmeal mixture until coated.

Fry in a bit of olive oil for about 3 minutes or until breading becomes golden brown.

Bob likes to eat this on a sub roll with lettuce, tomatoes, and mayo.

INGREDIENTS:

Your choice of bread, I used homemade rye

Sliced turkey

Sauerkraut

Swiss cheese

Thousand Island Dressing

Olive Oil

PREPARATION:

Spread a little Thousand Island Dressing on two slices of bread*. Then start layering your fillings.  I like to put the cheese on first so it will have a good chance of melting into an ooey gooey bite of heaven.  Then top with sliced turkey, sauerkraut, and second slice of bread, with Thousand Island Dressing on the inside.

Using a basting brush, coat the outside of the sandwich with a little olive oil and place on your preheated Panini maker or griddle.  Cook until bread is toasty, and serve with a side of dressing.

*Note:  Don’t put too much dressing on the bread or you’ll end up with a sloppy, wet sandwich.  And if you’re grilling?  It will be near impossible to flip.

PULLED PORK SANDWICHES

Serve a pork dinner on Sunday.  On Monday, make pulled pork sandwiches made from leftover pork.  Genius.  Serve on Tortilla wraps or rolls.

Having guests?  Make sliders!

INGREDIENTS:

Leftover pork roast (approx. 3 cups)

1 cup of your favorite bbq sauce

½ tsp crushed red pepper flakes

Optional squirt of Sriracha sauce

¼ cup water

PREPARATION:

Cut up leftover pork into chunks anywhere from 1” to 2 ½”.  (It doesn’t matter). This is my lazy woman’s way of making pulled pork.  I can’t be bothered when I have other important things to do.  And it SO works!

Pour about ½ cup of your favorite bbq sauce in a 2 quart saucepan.  Add the pork and if there are any whole garlic cloves left from your roast, throw them in also.  Pour another ½ cup bbq sauce and ¼ cup of water.  Stir. This has to simmer on low heat for about 30 minutes, so you may need to add a little more water later.  You want the meat to be pretty much covered.

Cover the pan and simmer for 15 min.  If there are any large chunks of meat, break them up with a heavy wooden spoon. Let it simmer for another 15 min and it should be perfect!

NOTES:  If you think you see some carrot in there?  You do, but it will break down and nobody will know it’s in there.  It adds another layer of flavor.

I use this same method to make pulled chicken.  I pull it out of the fridge, chunk it, and throw it in the pan.

This sandwich almost makes a body go weak in the knees.  Pile it high, grill it  or cook on your panini-maker, and dive in!

A fantastic grilled sandwich with layers of corned beef on rye bread, swiss cheese, sauerkraut and Thousand Island Dressing. Serve with french fries and a pickle and call it dinner. We did!
