TENDER BBQ PORK CHOPS

     I’ve been making these pork chops forever. Even the boys liked them when they were little, and they were very picky.  By switching out the bbq sauce to your favorite, you can make them sweet and spicy, hickory flavored, or even use my Bourbon BBQ sauce.  They are incredibly easy, delicious, and fork tender.  Give them a try. 

INGREDIENTS:

5 or 6 pork chops (I usually use boneless, but bone-in would be fine)

4 cloves garlic, chopped

1 ½ cups favorite BBQ sauce

1/3 cup water

Olive oil and butter for the pan

Pepper

 

PREPARATION:

Drizzle a bit of olive oil in bottom of heavy skillet.  Add 1 TBSP butter and the garlic.  Brown chops on both sides (sprinkle with pepper).  Add BBQ sauce and water.  Cover, and simmer until tender.

Simple?  You bet!

NOTE:  I usually add a bit of crushed red pepper cause we like them spicy.  Allow a minimum of 60 minutes to simmer, depending on thickness of chops.   Don’t worry about the water.  It evaporates out while the chops are cooking.  You’ll end up with a nice sauce.

OVEN-FRIED OYSTERS

Oven-Fried Oysters Recipe

 Ingredients:

3/4 cup all-purpose flour

1/8 teaspoon pepper

2 eggs

1/2 cup Seasoned dry bread crumbs

1/2 cup Andy’s Cajun fish breading (or your favorite)

2/3 cup grated Romano cheese (or Parmesan)

1 teaspoon garlic powder

1 pint whole oysters, drained

2 tablespoons olive oil

 

Directions:

1. Combine the flour and pepper in a bowl or a quart zippered baggie. In bowl, whisk eggs. In another bowl or quart zippered baggie, combine the bread crumbs, cheese, parsley and garlic salt.

2. Coat oysters with flour mixture, then dip in eggs, and coat with crumb mixture and place in a greased baking dish, 15-in. x 10-in. x 1-in., drizzle with oil.

3. Bake at 400° for 15 to 20 minutes or until golden brown.

 

OPTIONAL:

I make a sauce by mixing:

1/3 cup Sriracha Ranch dressing

1/3 cup mayonnaise

1 tbsp. minced garlic

1 tsp.  Sriracha sauce

BABY CLAMS, BACON, TOMATOES & MUSHROOMS OVER PASTA

Twenty minutes from pantry to table? What could be easier!  Baby clams, bacon, mushrooms, and tomatoes over your choice of pasta.  Something incredibly quick to make that is surprisingly delicious.

INGREDIENTS:   YIELDS 3 – 4 SERVINGS

4 slices bacon, cooked and crumbled

¾ cup sliced mushrooms

2 TBSP olive oil

2 cloves garlic, minced

One 16 oz can Diced tomatoes with green pepper and onion

1/3 cup Chardonnay

½ cup freshly grated Romano cheese

Pepper to taste

1/8 tsp crushed red pepper

1 TBSP Parsley

One 10 oz can Baby clams

 

PREPARATION:

In a 3 qt saucepan, brown mushrooms and garlic over low heat with olive oil.  Add tomatoes with juice, Chardonnay and ¼ tsp pepper.  Simmer for 15 minutes.  Add cheese and stir until melted.  Add Parsley and stir.  Add clams with juice and bacon, just heating through.

Serve over linguine or your favorite pasta with extra grated cheese.

     Green Mint Frosting for St Patty’s Day?  You bet!  Use your standard frosting recipe and add Spearmint Extract and Green Food Coloring.  I used a Russian Ball tip to pipe.

CHICKEN PARMESAN, BAKED

     I think chicken parmesan is one dish that everybody loves.  Breaded tender chicken, lots of homemade sauce and cheese . . . what’s not to like?   It’s one of Bob’s very favorite meals.  Here’s how to make it:

INGREDIENTS:

2 ½ lbs of chicken, boneless and skinless

2 cups seasoned breadcrumbs

1/3 cup fresh grated Parmesan

1/3 cup fresh grated Romano

2 eggs, beaten with 1 TBSP water

About 2 cups grated Italian cheese blend

 

PREPARATION:

You can either butterfly, pound your chicken until it’s about ½” thick, or leave it as it is.  Set out two bowls.  One with the beaten eggs, and the other with the breadcrumbs and Parmesan and Romano cheeses.  Dip the chicken in the egg, and then dip it in the breadcrumbs.

In a large skillet, drizzle olive oil over the bottom and preheat over low/medium heat.  While it’s browning, I normally sprinkle on a little pepper, onion powder, and garlic powder.  Brown the chicken until golden on both sides, and place in a casserole dish.  The pan will lose its oil as you’re frying, so you’ll have to add a bit here and there.  Pour your spaghetti sauce over the top, cover dish, and bake at 350°  F for about 30 minutes.

Remove the foil, and sprinkle cheese over the top.  I like to use the Italian four or five cheese pre-grated packages because it has everything in it.  You can use plain mozzarella if you’d rather.  Return to oven uncovered and bake for about 15 minutes until cheese is melted nicely and slightly browned.

BAKED SHRIMP SCAMPI

     Shrimp scampi is easy, trust me.  And the best part is that it is restaurant quality delicious.  In fact, this recipe is better than many restaurants.  It’s a wonderful dinner for special occasions, too.  It tastes so labor intensive, but it isn’t.  Instead of stovetop, this recipe is baked.  Easier yet!

INGREDIENTS:

12 – 16 OZ raw shrimp, peeled and deveined

4 TBSP butter

4 small or 2 large cloves garlic, minced

½ cup chardonnay wine

Parsley and Paprika

Salt and Pepper

Serve with lemon wedges

PREPARATION:

In the microwave, melt butter.  Add garlic, wine, seasonings.  Pour over the shrimp.  Squirt with half a lemon.  Stick it in the oven at 400 ° F for about 15 -20 minutes, stirring once or twice.  The shrimp is done when pink.

Yes, it’s that simple, really!  Serve with lemon wedges.

SMOKED BRISKET

     Bob outdid himself with this spectacular Smoked Brisket.  The smoker was a Christmas gift from Rob, Calene, and Champ.  To say that Bob was a happy camper, or happy smoker, was putting it lightly.
