ASIAN CHICKEN

This recipe is so old that I still have it on a recipe card. It’s been a family favorite for years. Prep time is about 5 minutes! Perfect when you have to get dinner on the table in a hurry. One caution. Make sure you use low sodium soy sauce.

INGREDIENTS:
4 boneless skinless chicken breasts
½ cup low sodium soy sauce
Juice of 1 lemon
1 garlic clove, minced
1 ½ TBSP brown sugar.

PREPARATION:
Put all ingredients except chicken in a small saucepan. Heat until sugar is dissolved. Pour over chicken and bake covered at 350* for20 minutes. Flip once and uncover for another 25 min.

After cooking, serve the sauce on white rice, lo mein, or fried rice. I served it tonight with egg rolls and authentic shrimp lo mein. I’ll post the shrimp lo mein tomorrow.
