MOCHA BROWNIE CAKE WITH MOCHA LATTE FROSTING
MOCHA BROWNIE CAKE WITH MOCHA LATTE FROSTING

INGREDIENTS:

¾ cup butter (1 ½ sticks), softened

2 ¼ cups brown sugar, packed

3 eggs

2 tsp vanilla extract

1 cup sour cream

½ cup + 2 TBSP cocoa powder

1 ¾

tsp baking soda

½ tsp salt

1 ¼ cups strong brewed coffee, cooled

2 ¼ cups AP flour

PREPARATION:

In large mixer bowl, cream butter and brown sugar until light and fluffy.  Add eggs one at a time, and beat well after each addition.

Add vanilla, sour cream, cocoa powder, baking soda, salt, and coffee, beating until well incorporated.  Add flour and beat.

Pour into greased and floured pans.  Bake at 350*F for about 25 – 30 minutes.  I used a bundt pan and loved how it came out.  It took 30 minutes to bake. Cupcakes took 20 minutes. Use the toothpick test to be sure.

MOCHA LATTE FROSTING

INGREDIENTS:

4 ounces cream cheese, softened

2 tsp Espresso powder

1 tsp Vanilla extract

Dash of Salt

1 TBSP cocoa powder

2 ¼ cups confectioner’s sugar

PREPARATION:

In mixer bowl, beat cream cheese until smooth, add vanilla, Espresso, Salt, Cocoa Powder until light.  Slowly begin adding the confectioner’s sugar until you have the consistency you want.  If it’s too thin, add a bit more sugar.  Too thick?  Add a tsp of milk.

OPTIONAL:  After frosting cupcakes, feel free to dust the top with cocoa powder

NOTE:  After I frosted the 8 cupcakes, I added this to the bowl:

1 TBSP dark corn syrup for sheen

1 TBSP cocoa powder

2 tsp espresso powder

Dash of salt

1 ½ cup confectioner’s sugar

Beat well, and then start adding half and half a teaspoon at a time until you end up with the right consistency.  You want it to be barely drippy.  Too thick, and it won’t run down the sides of the cake.  Too thin, and it will run off and pool at the bottom.

    1. Let me just say, Doireann, that one of the taste testers with whom I shared a large sample of this cake, told me this, “It was like a shark attack! We devoured the entire piece in one sitting. Tommie said it’s the best frosting he’s ever had in his life. He is standing beside me right now and he’s licking the foil wrapping!”
