1 lb ground beef
½ lb ground pork
1 medium onion, chopped
3 slices bacon, cooked and crumbled
¼ cup quick oats (why not sneak some fiber in there?)
About 2 slices shredded bread
1/3 cup ketchup
2 T prepared mustard
2 cloves garlic, minced
1 beef bouillon cube
¼ cup red wine
Pepper to taste
In small skillet, cook onion and garlic in 1 tsp oil. When soft, add bouillon and wine. Cook until bouillon dissolves, cook 1 minute more. Cool.
In large bowl, mix cooled onion mixture with all the rest of ingredients and mix well. If it seems a little wet, add a little more bread. If it seems to dry, add a few T milk. Form into a loaf and bake at 350* for 45 min. Spread glaze on top and continue baking until meat is no longer pink. Internal temp should be 165*-170*. It should take a good hour, total.
In a ramekin, mix 3 TBSP ketchup with 3 TBSP brown sugar, and 1 TBSP mustard. Stir until blended. Your family will fight over the ends.
This is so good served with my steakhouse style mushrooms and onions, and twice baked potatoes. Ugh, my mouth is watering. No worries, I’m not drooling yet.
