CHILI AND CORNBREAD MUFFINS

Nothing is better on a nasty windy day than a piping hot bowl of homemade chili and cornbread muffins on the side.  We’ll be sitting down at our antique hutch table in a few minutes to enjoy this feast.  Chili, like spaghetti sauce is a matter of personal preference regarding the amount and variety of seasonings.  You can customize this recipe however you would like.

INGREDIENTS:

1 lb ground beef or ground turkey

2 links Andouille sausage or ¼ lb Italian sausage

1 med onion, diced

2-3 celery ribs, sliced or diced

2-3 small sweet peppers, diced

4-6 cloves garlic, depending on size

1 small can tomato paste

1 large can diced tomatoes

2 large cans crushed tomatoes

1 TBSP Worcestershire

1 can beef broth

1 cup applesauce, unsweetened

4-5 cans beans, rinsed and drained

½ tsp crushed red pepper flakes

1 tsp parsley

1 tsp Hungarian Paprika

1 tsp basil

1  1/2 tsp cumin

2 TBSP chili powder

PREPARATION:

Brown beef and sausage in 8 qt Dutch oven.  (I usually remove the casings from the sausage cause it bugs me).  If you have grease, use my paper towel trick which was shared by an old Indian.  (You know, old Indian trick).  Wad a couple of them up and push it into the grease with a heavy spoon.  Then toss the paper towels.  Just before meat is done, add the onion, celery, diced garlic, peppers and tomato paste.  Cook and stir for about 5 min.

Add tomatoes, Worcestershire, beef broth and applesauce, simmer on low heat for a good hour.  (Don’t question the applesauce.  It acts as a thickener while adding a touch of sweetness.  Just try it).

Add seasonings and beans.  I love to use a variety of beans.  I like dark and light red kidney, white kidney (cannellini), and black beans.  You know I’m all about color, as well as taste.  Simmer another ten minutes and serve.

Optional Decor:  sour cream, grated cheese, sliced green onions. Any of these will make your chili very pretty J

Serve with:  crackers, salad, bread and butter, Cheddar soda bread, Grilled Cheese, hot dogs, Scoops, or my favorite corn bread or corn muffins.
