COUNTRY STYLE POTATO SALAD
COUNTRY STYLE POTATO SALAD

INGREDIENTS:

5 cups Potatoes, cooked and chopped

1 Rib Celery, diced

1 Sweet Mini Pepper, diced

½ cup Mayo

¼ cup  Sour Cream

2 Hard-cooked eggs + 1 for garnish

2 TBSP chopped Onions

1 TBSP Prepared Mustard

½ tsp Garlic Powder

Salt and Pepper to taste

Paprika and chives to garnish

PREPARATION:

Boil potatoes until soft and cooked through.  I leave the skins on, but that’s totally optional.  Let cool and chop or dice to desired size.

Dice celery and 2 chopped hard boiled eggs.  Add them, as well as the rest of ingredients to the potatoes. Garnish top with sliced hard boiled egg, then sprinkle Paprika and chives over all.  Refrigerate.
