SWISS STEAK WITH GRAVY AND MUSHROOMS

Swiss Steak with mushrooms and gravy

This is an old family recipe.  My mom used to cook this a lot when we were growing up.

INGREDIENTS:

1 large family size round steak

1 Large onion, sliced from top to bottom

1 can beef broth

¼ cup burgundy

4 TBSP Flour to thicken gravy

1 cup sliced mushrooms

Salt and Peper

In large heavy frying pan, Saute onions and mushrooms in a bit of oil.  Remove to a medium bowl.

Trim fat and cut meat into serving size pieces.  Dredge in seasoned flour and sear quickly in the same pan.  Remove, and add to the bowl with the veggies.

In same pan, add beef broth, burgundy, and 4 TBSP flour.  Stir until flour is incorporated.  Return meat and veggies to pan.  Cover and simmer for 60-90 minutes or until meat is fork tender.  (My mother used to bake it in the oven, but I prefer the stovetop.  If you cut back on the beef broth, this would work well in a crockpot).

Serve with rice or mashed potatoes.
