Chicken Cordon Bleu
CHICKEN CORDON BLEU MADE FROM LEFTOVER CHICKEN. 30 MINUTES FROM FRIDGE TO TABLE!

This chicken cordon bleu is so fast from fridge to table and is made out of leftover chicken.  What could be better?  Simple and delicious.

4 cups cooked chicken, sliced or cubed

pepper

10 Ritz or Townhouse Crackers

1/2 a slice of bread

4 TBSP butter

1 TBSP Dijon mustard

4 slices deli ham

4 slices Swiss cheese

In a 9 x 9 or 10 x 11 baking dish, lay chicken on the bottom.  (NO need to grease dish).  Sprinkle with pepper. (no salt needed.  There is plenty in the crackers and cheese).  Place Dijon mustard on chicken and stir to mix.

Pulse bread and crackers in food processor until of fine consistency.  Sprinkle over chicken.

Melt butter and pour over chicken and crumbs.

Bake at 350* for 10-15 minutes or until crumbs are toasty browned.

Remove from oven.  Lay ham slices on top of crumbs.  Lay sliced cheese on top of ham (No need to shred or tear up). Return to oven for 10 – 15 minutes or until cheese is bubbly.
